The dish with the gooey cheese // Mac 'n' Cheese

The perfect weeknight meal for all this rainy weather when you've got nothing in the fridge.

The trick to getting this right is getting the sauce consistency perfect and ensuring you get that top crispy.

"I'd pay for this" - Mum.

The best pasta type to use is one that can encase the sauce. For this recipe, i'd recommend maccheroni. Macaroni if you don't have it.



Ingredients (Serves 2)


  • 2 handfuls maccheroni

  • 1 big handful cheese (sharp cheddar and mozzarella works best)

  • 1/4 tsp grated nutmeg

  • Handful toasted breadcrumbs

  • 30g butter

  • 30g white flour

  • 500ml oat milk (or alternative of your choice)

  • Salt and pepper to taste

  • Small ladle starch water (if required)

Method


  1. Get that oven cranking. 180C grill will do the trick

  2. Bring your kettle to the boil, whilst this is happening, get your butter in a medium size pot to melt.

  3. Once boiled, get that pasta in and cook for 2 mins less than the packet says. For this, lets say around 7 should do. You're doing this to factor in the cooking time in the oven and you're not left with mushy pasta....

  4. Whilst cooking, lets get the flour in and whisky quickly. Incorporate the flour into the butter and cook out on medium heat, expecting the odd bubble here and there. Add a tiny but of milk, mix in and then slowly add the rest. i went for oat to reduce my dairy intake and flavour. The slight balance of sweetness is homely and doesn't make me need to remain crazy thirsty after.

  5. Add cheese, nutmeg, salt and pepper and mix together until the sauce is thick and coats the back of your wooden spoon.

  6. Add your pasta in and mix through thoroughly. If too thick, add some starch water. It's an absolute god send so DO NOT tip it out until you're done.

  7. Finish with crispy breadcrumbs and a splash of extra virgin olive oil.

  8. Pop into the oven until golden brown on top, around 20 mins or so.

Serve with a side of broccolini if you're trying to be good, or fried chicken and more mac and cheese if you aren't.
