The perfect weekend snack to have with a few drinks and friends.

The trick to getting this dish full of flavour is a either a spiced buttermilk soak or a dry rub with salt for 36 hours in the fridge.

"You didn't make enough"


Ingredients (Serves 2)

• 900g chicken wings

• 1 cup buttermilk

• 1 cup all-purpose flour

• 1 teaspoon paprika

• 1 teaspoon garlic powder

• 1 teaspoon onion powder

• 1/2 teaspoon cayenne pepper

• 1 teaspoon salt

• 1/2 teaspoon black pepper

• Cooking spray (for air fryer)


Method

  1. Marinate the chicken wings: In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir well to create the spiced buttermilk dredge. Add the chicken wings to the bowl, ensuring they are fully submerged in the mixture. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (ideally overnight) to allow the flavors to work their magic and the buttermilk to tenderise the chicken.

  2. Prepare the spiced flour coating: In another large bowl, place the all-purpose flour. You can add extra spices here if desired for even more flavor. Mix well to ensure even distribution of the spices.

  3. Dredge the chicken wings: Preheat your air fryer to 200°C. Remove the chicken wings from the spiced buttermilk dredge, allowing any excess liquid to drip off. Roll each wing in the spiced flour mixture until they are fully coated, pressing the flour onto the wings to adhere.

  4. Cook in the air fryer: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the coated chicken wings in a single layer in the air fryer basket, making sure they are not touching. Depending on the size of your air fryer, you may need to cook the wings in batches.

  5. Air fry the wings: Cook the chicken wings at 200°C for 10-15 minutes,size dependant, flipping them halfway through the cooking time to ensure even crispiness. The wings should be golden brown and crispy when done.

  6. Serve and enjoy: Remove the crispy spiced chicken wings from the air fryer and let them rest for a minute before serving. These wings are delicious on their own or served with your favorite dipping sauce for an extra burst of flavour.


These crispy spiced chicken wings, made with a spiced buttermilk dredge and cooked in the air fryer, are sure to be a hit with your family and friends. Be sure to make enough as they'll be gone in no time.


Top tip, you can cook them a majority of the way through and then finish cooking when guests arrive.
