The best weeknight meal, just be careful as you'll have a lot of admirers.

The trick to getting this right is getting the dumpling dough nice and thin and marinating your mixture overnight.

Ingredients (Serves 2 dish)
- 250g all-purpose flour
- 1/2 teaspoon salt
- 135g boiling water
Filling Ingredients:
- 1 cup ground pork
- 1 cup finely chopped Napa cabbage
- 1/4 cup finely chopped spring onions
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon minced ginger
- 2 cloves garlic, minced
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
Method:
1. In a large mixing bowl, combine the flour and salt for the dough. Gradually add warm water and knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
2. In a separate bowl, combine ground pork, Napa cabbage, spring onions, soy sauce, sesame oil, ginger, garlic, sugar, and black pepper. Mix well until thoroughly combined.
3. On a floured surface, roll out the dough into a long log shape. Cut the log into small pieces (about 1-inch wide). Take each piece and flatten it into a round wrapper using a rolling pin. Repeat with the remaining dough.
4. Place a small spoonful of the filling in the center of each wrapper. Moisten the edges of the wrapper with water, then fold over each previous piece like the picture above. If you're not up for it, you can easily fold in half. Seal the edges by pressing them firmly together.
5. Repeat the process until all the wrappers and filling are used.
6. To cook the dumplings, bring a large pot of water to a boil. Carefully drop the dumplings into the boiling water and cook for about 6-8 minutes, or until they float to the surface and the filling is cooked through.
7. Alternatively, you can pan-fry the dumplings. Heat some oil and water in a non-stick pan over medium heat. Place the dumplings in a pan and cook until the bottoms are golden brown and the dough is cooked with the lid on. You may need to take the lid off to crisped the bottoms.
8. Serve the dumplings hot with your favorite dipping sauce, such as soy sauce mixed with vinegar or chilli oil.
