This easy-to-prepare meal not only delights your taste buds but also supports your well-being in numerous ways. If you choose to ferment on the bench with water, oats undergo the fermentation process producing beneficial probiotics, promoting a healthy gut and boosting your immune system. The fermentation also enhances nutrient absorption, making essential vitamins and minerals more readily available to your body. With a wealth of fibre and complex carbohydrates, overnight oats aid in regulating blood sugar levels and promoting sustained energy throughout the day. If you choose to soak in the fridge they are still very good for you, just with very limited fermentation due to temperature.

For this recipe, I won't be fermenting the oats as this is just a quick and easy overnight oats recipe for those interested in learning about soaking grains. There is an "anti-nutrient" called Phytic acid which limits the amount of iron, zinc and calcium absorption. By soaking oats, you can limit this and help your body absorb the nutrients it needs.

Ingredients (per serving)


If you want to make more of these, simple multiply each ingredient by how many portions you want.


- 60ml water/oat milk

- 50g oats (I sometimes toast mine for extra nuttiness)

- 2 tbsp chia seeds

- 10 goji berries

- 1/2 tsp honey

- Pinch of salt


Method for easy overnight oats:


1. In a mason jar or airtight container, combine the oats, chia seeds, and goji berries.

2. If you prefer a creamier texture, use oat milk instead of water.

3. Add the water or oat milk to the dry ingredients in the jar.

4. Drizzle in the honey for natural sweetness and a delightful touch of flavor.

5. Finally, add a pinch of salt to enhance the overall taste.


Mixing and Storing:

1. Secure the lid tightly on the jar and give it a good shake to ensure all ingredients are well combined.

2. If making more than one, tip/spoon evenly across the glasses you're using. Cover with tin foil and place on a tray in the fridge.


Enjoying Your Overnight Oats:

1. The next morning, take the jar out of the refrigerator and give it a gentle stir.

2. Feel free to top your overnight oats with your favourite fruits, nuts, or additional honey for extra sweetness.

3. Enjoy the creamy, nutrient-packed goodness that will fuel your day with sustained energy and health benefits.


Extra Notes:

-A very important note here is that by soaking your oats overnight, it is making these more digestible for you, helping you manage your blood sugar level. When adding fruits, be wary not to under all your hard work but make sure you still enjoy them. Coming soon will be a series on fermenting fruit so keep an eye out.

- Overnight oats can be prepared in batches and stored in the refrigerator for up to 3-4 days.

- Experiment with various toppings and flavour combinations to customise your perfect breakfast treat.

- Remember you can heat these into a porridge type breakfast if you'd prefer something slightly warmer in the morning. It's also not required to cook these as they've been soaked overnight.
