The trick to getting this right is getting the right cut of pork and cooking it long enough for the collagen and connective tissues to break down.

Indulge in the ultimate comfort food with our mouthwatering Pulled Pork Burger! Succulent slow-cooked pulled pork, smothered in a savoury chilli mayo, is piled high on a soft, toasted bun. Topped with crisp coleslaw and a hint of zesty pickles, this burger delivers a perfect balance of sweet and tangy flavors that will leave your taste buds dancing. Savour every bite of this hearty and satisfying burger, a true delight for food enthusiasts and burger lovers alike.


Ingredients (Makes 8 buns)


For the Pulled Pork:

Ingredients:

- 2 pounds pork shoulder or butt

- 2 tablespoon brown sugar

- 2 tablespoon paprika

- 2 teaspoon garlic powder

- 2 teaspoon onion powder

- 2 teaspoon cumin

- 2 teaspoon salt

- 1 teaspoon black pepper

- 2 teaspoon cayenne pepper (optional)

-1 tablespoon American mustard

- 1 cup barbecue sauce

- 1/2 cup chicken or vegetable broth


Instructions:

1. Preheat your oven to 160°C.

2. In a small bowl, combine brown sugar, paprika, garlic powder, onion powder, cumin, salt, black pepper, and cayenne pepper.

3. Rub the mustard on the pork shoulder then rub massage in the spice mixture.

4. Place the pork in a roasting pan and add the barbecue sauce and broth.

5. Cover the pan with foil and roast for about 3-4 hours, or until the pork is tender and easily pulls apart with a fork.

6. Remove the pork from the pan and shred it using two forks. Set aside.


For the Cabbage:

Ingredients:

- 2 cups shredded cabbage

- 1 Granny Smith apple (sliced thinly)

- 1 tablespoon apple cider vinegar

- 1 tablespoon mayonnaise

- Salt and pepper to taste


Instructions:

1. In a bowl, combine shredded cabbage, apple cider vinegar, apple, mayonnaise, salt, and pepper.

2. Mix well until the cabbage is coated. Set aside.


For the Homemade Buns:

Ingredients:

- 3 1/2 cups all-purpose flour

- 2 tablespoons granulated sugar

- 1 tablespoon instant yeast

- 1 teaspoon salt

- 1 cup warm milk

- 1/4 cup unsalted butter, melted

- 1 egg, beaten

- Sesame seeds (optional)


Instructions:

1. In a large mixing bowl, combine flour, sugar, instant yeast, and salt.

2. Add warm milk, melted butter, and beaten egg to the dry ingredients.

3. Mix until the dough comes together.

4. Transfer the dough to a floured surface and knead for about 5-7 minutes, until smooth and elastic.

5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

6. Punch down the dough and divide it into 8 equal portions.

7. Shape each portion into a round bun shape and place them on a baking sheet lined with parchment paper.

8. Cover the buns with the kitchen towel and let them rise for another 30 minutes.

9. Preheat your oven to 190°C

10. Brush the buns with beaten egg and sprinkle sesame seeds on top (optional).

11. Bake for 15-20 minutes, or until the buns are golden brown.

12. Remove the buns from the oven and let them cool slightly on a wire rack.


Assembling the Burger:

1. Slice the homemade buns in half and toast.

2. Place a generous amount of the cabbage mixture on the bottom half of the bun

3. Top it with a big spoonful of spiced pork and a dollop of chilli mayo

4. Cover with the top half of the bun.

5. Serve the spiced pulled pork burger warm and enjoy!


Note: Feel free to customise your burger with additional toppings such as cheese, pickles, or your favourite condiments. I love cornichons but somehow they're an acquired taste.
